Mom's Peanut Butter Cookies

Simply the best.

1/2 cup butter or hard margarine, (softened but not melted)
1/2 cup peanut butter
1/2 cup packed brown sugar
1/2 cup granulated sugar
1 egg
1 cup all-purpose flour

Cream together margarine, peanut butter and sugars. Add egg. Mix in flour. Form into round balls, flatten with a fork, and bake on greased cookie sheets at 350*F. for 8- 10 minutes, or until lightly browned.

Makes 2-3 dozen.

This recipe was not the best - cookies spread out way too much - making them very flat - would not use again

  6. Hmm... They shouldn't spread out way too much. Did you use soft, tub margarine or melt the margarine? With the correct ingredients they spread a bit, but not much.

  7. I chilled the dough before baking after one pan turned out flat. Then they were perfect.

It sounds like it's definitely a margarine issue. If the margarine is too soft, the cookies may spread.

If the dough is too soft to roll into balls, chill it for a bit until it firms up enough to roll.
